  • 1 ciabatta
  • 5 wedges of The Laughing Cow Cheese Spread Light
  • 3 medium heirloom tomato, deseeded and finely chopped
  • 50g onion, finely chopped
  • 2 avocados, diced into small pieces
  • 1 tbsp. lemon juice
  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. garlic, finely chopped
  • 2 tbsp. fresh basil, finely chopped


  1. Preheat your oven to 190°C
  2. Cut the ciabatta into 1-inch diagonal slices.
  3. Spread a layer of The Laughing Cow Cheese Spread Light onto each slice and set aside.
  4. Combine remaining ingredients in a medium-sized bowl and spoon mixture onto the ciabatta slices.
  5. Mix extra virgin olive oil and chopped garlic in a bowl.
  6. Brush slices with olive oil & garlic on both sides
  7. Arrange in a single layer on a baking sheet and grill until lightly toasted.
